Control Freaks Make Great Winemakers
Guilty as charged. Twenty years have taught us that making good wine requires a freakish dedication to detail and commitment to quality over quantity. But we take it to the next level times 10, because Trout Springs Winery is one of the few Wisconsin wineries that use its own grapes, producing what is called an estate bottled wine. (Even though we harvest our own grapes, we also import grapes from California.)
We conduct countless production trials and taste tests, and continually develop new grape varietals (around 12 varieties are currently under cultivation), which are evaluated for taste and hardiness for three years. But it’s all worth it when a customer takes a sip, smiles, and says, “This is really good.”

Afternoon Delight - A chocolate raspberry dessert wine
This wine is truly decadent. Ripe raspberries are handpicked from local patches. Once pressed, a hint of chocolate is added. So good it's like dessert in a glass. $22.65 (375ml)
Autumn Rouge - Estate-grown semi sweet dry red wine
Trout Springs Winery enjoys giving special attention to detail as only a small vineyard can. The limited-vintage Autumn Rogue is a fine example of that. Hand-harvested, then lightly pressed, it is warm fermented to extract all the flavors of grapes grown in loamy soil and fed by artesian springs. Finally, this lovely wine is set to rest for eight months of aging in French oak. Enjoy its hints of currant, plum, raspberry, and spice--a compliment to any occasion. $14.95 (750mL)

Each year, Trout Springs Winery makes the trek to Door County to find the finest Montmorency cherry juice available. Using special techniques and giving fine attention to detail, we cool ferment this elixir in stainless steel until perfection is achieved. Sangiovese - A medium-bodied dry red wine
This aged varietal comes to us from the higher elevations in California. Grown on small-acreage vineyards, these grapes are hand picked and then brought to Trout Springs Winery to be processed. We barrel age ferment the wine for 8 months in American oak barrels to allow the spicy yet fruity flavors to combine, while also adding just the right amount of smoke from the toasted barrels. $17.10 (750mL)

This wine represents three California vinifera grapes, each bringing unique characteristics to the blend. Hints of pepper, tannin, currant, boysenberry and raspberry fruit compliment its rich jammy flavor after being fermented in French and American oak for 4 years.
