​Control Freaks Make Great Winemakers​

     Guilty as charged. Twenty years have taught us that making good wine requires a freakish dedication to detail and commitment to quality over quantity. But we take it to the next level times 10, because Trout Springs Winery is one of the few Wisconsin wineries that use its own grapes, producing what is called an estate bottled wine. (Even though we harvest our own grapes, we also import grapes from California.)      
​     We conduct countless production trials and taste tests, and continually develop new grape varietals (around 12 varieties are currently under cultivation), which are evaluated for taste and hardiness for three years. 
But it’s all worth it when a customer takes a sip, smiles, and says, “This is really good.”

Afternoon Delight - A chocolate raspberry dessert wine  
This wine is truly decadent. Ripe raspberries are handpicked from local patches. Once pressed, a hint of chocolate is added. So good it's like dessert in a glass. $22.65 (375ml)

Autumn Rouge - Estate-grown semi sweet dry red wine  
Trout Springs Winery enjoys giving special attention to detail as only a small vineyard can. The limited-vintage Autumn Rogue is a fine example of that. Hand-harvested, then lightly pressed, it is warm fermented to extract all the flavors of grapes grown in loamy soil and fed by artesian springs. Finally, this lovely wine is set to rest for eight months of aging in French oak. Enjoy its hints of currant, plum, raspberry, and spice--a compliment to any occasion. $14.95 (750mL)

Babordo Vino Nuovo - A port-style wine 
​Made from grapes picked in our very own vineyard, Nuovo is our port style wine done in stainless giving it a bright fruitiness. With hints of ripe raspberry and chocolate, this wine is the perfect complement to chocolate. $39.15 (750mL) 

Black Velvet - A black raspberry port-style wine. $25.70 (375mL) 

Below Zero - This special vintage of Below Zero red ice wine was estate vinted and bottled from grapes grown at TSW on the Wisconsin Ledge AVA. This wine is super intense, with multiple layers of currant, berry and exotic flavors that won't quit. This limited edition of award winning wine is now available. $103.00 (375mL) 

​Carousel Candy - A caramel apple dessert wine 
Remember the first time you went to the fair? This wine will bring it all back; it's just like biting into a nut covered caramel apple, without the stick. $22.65 (375ml)

Clara's Cranberry Cuvee - Fruit wine 
Dedicated to the memory of our Grandma Clara, this wine is sweet and tart just like her. She lived a full and productive life throughout the 99 years she shared with us, and was always enthusiastic about helping with the cooking at winery events.  $20.15​ (750mL)

Millennium Cherry - Sweet cherry wine 
Each year, Trout Springs Winery makes the trek to Door County to find the finest Montmorency cherry juice available. Using special techniques and giving fine attention to detail, we cool ferment this elixir in stainless steel until perfection is achieved. This "Cherriest of Cherry" will compliment chocolates, Italian cuisine, or may be served as a desert itself. $19.35 (750mL)

Pear Extrordinaire - Sweet pear wine 
A blend of Bartlett and Asian pears, pairs well with blue cheese or walnuts. $19.35 (750mL)

Petite Sirah - Full bodied dry red wine
Aged 7 years, this one was worth the wait. $29.85 (750mL)

Rainbow Blush - An semi- sweet white wine.
Made from a blend of our white grapes, primarily Frontenac Gris. $14.95 (750ml)

Riesling - A fruity dry wine
This Riesling is like no other, more on the flavor profile of an un-oaked chardonnay. Light, crisp, and clean. $17.10 (750ml)

Ruby Slipper - A light delicate red dessert wine
Made from our limited reserve of Fredonia grapes grown in our vineyard, this exclusive wine is just like it's namesake, delicate and beautiful. $20.55 (375ml)

​​​Three Amigos - A full-bodied dry red wine
This wine represents three California vinifera grapes, each bringing unique characteristics to the blend. Hints of pepper, tannin, currant, boysenberry and raspberry fruit compliment its rich jammy flavor after being fermented in French and American oak for 4 years. Three generations are represented on the label symbolizing these varietals as different, yet connected to work well together. $27.75 (750mL)

Vino Rosso alla Mandorla - A sweet red wine  
A true Italian classic, combining the rich sweetness of our estate red wine with a delicate almond infusion. Bursting with the vibrant flavors of currant, plum and raspberry, it offers a balanced profile with a subtle nutty finish. $38.95 (750mL)
